Snackin’ With Sarah Sellers: ‘Idol’ Boys’ Night Viewing Nosh

Diehard "American Idol" viewers will remember Sarah Sellers as the geek-chic food blogger who made it to Hollywood Week last year. (Watch her Season 10 audition here.) Sarah has since continued her food-blogging, and has been cooking up scrumptious snack suggestions for any "Idol" viewing party and posting them here in Reality Rocks each week.

So tonight, Season 11's male semifinalists (the already-announced top 12 boys, plus one bonus boy to be announced) compete LIVE for the first time this year--a true television event for "Idol" fans who've sat through weeks of fair-to-middling auditions and hokey Vegas group numbers. So tonight calls for some really hearty fare: mushrooms and mozzarella, for the men!

Mushroom and Mozzarella Crostinis

Yields around 20-25 crostinis

Ingredients

▪ 1 tbsp extra virgin olive oil
▪ 1/2 cup chopped yellow onion, around 1/2 an onion
▪ 1 garlic clove, minced
▪ 2 8oz packages assorted mushrooms, sliced *Sarah used baby bella, shitake, and portabello mushrooms
▪ 1/2 tbsp fresh thyme, minced
▪ salt and pepper
▪ 1 baguette, sliced
▪ cooking spray
▪ 1/2 cup mozzarella, shredded

Preheat oven to 350.

Heat the olive oil in a large skillet over medium-high heat. Sauté the onions until soft then add the garlic. Sauté for 30 seconds until fragrant. Add the mushrooms, thyme, and season with the salt and pepper. Sauté until nice and brown and the excess liquid has evaporated. Adjust seasoning accordingly. Set aside.

While the mushrooms are sautéing, place the baguette slices on a large cookie sheet and spray with the cooking spray. Bake in the oven for 5 minutes until lightly toasted, remove from the oven. Top the bread with the mushroom mixture.
