Snackin’ With Sarah Sellers: ‘Idol’ Hollywood Week Girls’ Night 1 Viewing Nosh

Sarah in the kitchen [photo: Justin Goode]"American Idol" Season 10 alum and food blogger Sarah Sellers has been posting her viewing-party snack recipes in Reality Rocks for two "Idol" seasons now, and she's back to get your mouth watering on every night of Season 12.

Tonight, Hollywood Week continues with the female contestants, so Sarah was "inspired by the West Coast, with these fresh, quick, and easy appetizers." Tonight's recipe should get you in a properly Californian state of mind. Enjoy!

Goat Cheese & Mango Nachos

Ingredients:
▪ 1 mango, diced
▪ 1 avocado, diced
▪ 1/4 cup tomato, diced
▪ 2 tbsp cilantro, minced
▪ 2 tbsp jalapeño, minced, reserve 1 tbsp
▪ 1 tsp fresh lime juice
▪ 2 tbsp red onion, minced
▪ 1/4 kosher salt
▪ 1/4 tsp fresh cracked pepper
▪ 4 oz goat cheese
▪ tortilla chips, scoops

Preheat oven to 375.

Mix the mango and next 8 ingredients, through the black pepper, in a large bowl until well-combined. Taste and adjust seasoning accordingly. Set aside.

Fill each chip with around 1 tsp of goat cheese. Place on a cookie sheet and bake until the cheese has started to melt, around 10-15 minutes. Remove from the oven.

Top each chip with a teaspoon of the mango salsa. Put back in the oven for 5 minutes. Sprinkle with the remaining tbsp of jalapeños and serve warm.
