Snackin’ With Sarah Sellers: ‘Idol’ Top 4 Night Viewing Nosh

Season 10's Sarah SellersDiehard "American Idol" viewers will remember Sarah Sellers as the geek-chic food blogger who made it to Hollywood Week last year. (Watch her Season 10 audition here.) Sarah has since continued her food-blogging, and has been cooking up scrumptious snack suggestions for any "Idol" viewing party and posting them here in Reality Rocks each week. She was also my special guest on a special South By Southwest version of "The Day After" in Austin recently, which you can watch HERE!

So tonight, the top four Idols will sing songs from my own home turf, California. How was Sarah inspired by this theme? "When I think California, I think healthy and fresh, and considering last week's British recipes, I wanted something simple this week," she says. "So this recipe is an ode to the avocado, something I always want when I'm in Cali!"

Avocado Tortilla Roll-Ups
Ingredients:

▪     1 large avocado
▪     1/4 cup light sour cream
▪     1/2 lime, juiced
▪     1/4 tsp kosher salt
▪     1/4 tsp garlic powder
▪     1/4 tsp chili powder
▪     1 tsp jalapeno, finely chopped
▪     6 whole-wheat tortillas, or 3 super-sized tortillas
▪     1 cup Colby cheddar cheese blend, shredded
▪     1/2 cup loosely packed cilantro, rough chop
▪     Cholula chili garlic hot sauce

In a large bowl, mix together the avocado and next 6 ingredients, through the jalapeno, until nice and smooth. Smear the avocado mixture onto the tortilla, leaving a small border. Sprinkle with the cheese and cilantro, then drizzle with the hot sauce. Repeat with the remaining 5 tortillas. Place in the fridge until ready to serve.

Cut the chilled tortilla rolls with a serrated knife into 1" pin-rolls.
