Snackin’ With Sarah Sellers: ‘Idol’ Vegas Week Night 2 Viewing Nosh

Sarah Sellers [photo: Justin Goode]Season 10 alum and cool food blogger Sarah Sellers has been posting her viewing-party snack recipes in Reality Rocks for two "Idol" seasons now, and she's back this year to get your mouth watering every night of Season 12.

Tonight, Vegas Week continues with the first 10 male semifinalists, so for tonight's viewing, Sarah is naturally inspired by Sin City. "I love Las Vegas, and all I could think of was something sinfully delicious, with crispy bacon and sweet brown sugar glazed on top," Sarah explains.

So, bacon-wrapped chicken it is!

Spicy Bacon-Wrapped Chicken Bites

Ingredients:

  • 1 lb boneless skinless chicken breast
  • 1 tsp kosher salt
  • 1 tsp cracked black pepper
  • 1 tbsp chili powder
  • 1 large jalapeño, seeded, thinly sliced
  • 8 pieces center-cut bacon, cut in thirds
  • 1/2 cup brown sugar

Preheat oven to 350.

Cut the chicken into bite-size pieces and liberally season with the salt, pepper, and chili powder. Toss until evenly coated with the seasoning.

Press a sliver of jalapeño against each piece of chicken and tightly wrap with a piece of bacon. Overlap the ends to seal.

Dredge each piece of chicken in the brown sugar and place on a foil-lined baking sheet, seem side down.

Bake for 30-35 minutes until the chicken is cooked through and the bacon is nice and crisp.
