Sarah Sellers is a woman of good taste, literally. The bespectacled and beestung-lipped totally robbed Season 10 "American Idol" contestant not only digs good music (just check out her YouTube channel), but she's a food blogger and whiz in the kitchen. And now Sarah is exclusively posting her own recipes in Reality Rocks, offering the ideal snacking suggestions for your weekly "Idol" viewing parties.
This week's "Idol" is Motown-themed, so Sarah is offering her own take on traditional soul-food snacks. Yesterday she served up some Creamy Buffalo Chicken Dip, and for tonight's devilishly exciting results show (at which the top 10 will be announced), she suggests this easy deviled-egg recipe. Deliciously Deviled Eggs
Yields 4-6 servings
▪ 8 eggs
▪ 1/4 cup light mayonnaise
▪ 1 tbsp coarse ground dijon mustard
▪ 1 green onion, diced
▪ 1 tbsp diced pimentos w/the juice
▪ 1/8 tsp garlic powder
▪ 1/8 tsp kosher salt and pepper
▪ paprika for dusting
Place the eggs in a large sauce pot and cover with cold water. Bring the water to a boil and boil eggs for 8 minutes. Remove the eggs and cool until they are easy to handle.
De-shell the eggs and slice in half. Scoop out the yolks into a medium-sized bowl. Mix all of the ingredients, through the kosher salt and pepper, together until smooth. If the mixture appears to be a little dry, add a bit more mayo.
Place about a teaspoon of the egg mixture back into the egg halves, where the yolks used to be. Dust lightly with paprika and chill.
