Snackin’ With Sarah Sellers: Top 12 Girls Night ‘Idol’ Viewing Nosh

Sarah Sellers, the cool geek-chic food blogger who auditioned for "American Idol" this season, sadly didn't make it past episode one of Hollywood Week. (She's one of the most-robbed contestants of Season 10!) But like the rest of America, she'll be watching this season to see how the friends she made in Hollywood fare on the live stage. And she has the perfect snack suggestions for any "Idol" viewing party!

So starting this week, Sarah is posting her "Idol" snack recipes right here in Reality Rocks, to get your mouth watering for every viewing night. Last night, as the top 12 boys competed, Sarah whipped up guacamole for the guys, and tonight it's chicken for the top 12 chicks!

Rotisserie Chicken Salad

Yields 4 servings

▪ 1 rotisserie chicken, skin removed
▪ 1/2 cup light mayonnaise
▪ 1 tbsp green onions, chopped
▪ salt & pepper to taste
▪ 1 small avocado, sliced
▪ chopped chives for garnish

Remove the skin from the chicken and place the meat in a large bowl (I usually end up with around 12-14oz of meat). Using two forks shred the chicken. Combine the remaining ingredients and chill in the refrigerator. **I add around 1 tsp of kosher salt and taste. It can get salty really fast so apply small amounts at a time and taste.

You don't have to chill in the refrigerator, but I've found the flavors to be much stronger once they've had time to marry in the fridge.

I serve mine on a toasted baguette or on tostadas, topped with the avocado slices and chives.
