This week, the top seven "Idol" finalists were not allowed to sing any ballads, and they had to sing rock 'n' roll. So tonight's viewing-party snack theme is "fast food"--with a little taste of something you might find on the menu at the Hard Rock Cafe. Enjoy!
Southwest Lettuce Wraps
- 1 tbsp extra virgin olive oil
- 1 tbsp butter
- taco seasoning
- 1 lb boneless skinless chicken breast
- 15.25 oz can whole kernel corn, drained and rinsed
- 15 oz can black beans, drained and rinsed
- ¼ cup red onions, diced
- ½ cup red bell peppers, diced
- 1 tbsp jalapeno, diced
- 1 tomato, diced
- juice from ½ lime
- ¼ cup cilantro, minced
- kosher salt and pepper to taste
- 1 tsp chile powder
- 1 head romaine or iceberg lettuce*
- ¼ cup sour cream
- ½ cup shredded pepperjack cheese
*For this recipe Sarah used romaine lettuce, but iceberg works just as well.
Heat the olive oil and butter in a large Dutch oven over medium-high heat until butter is melted. Generously season the chicken breast with the taco seasoning. Sauté 6-8 minutes on each side, until the chicken is cooked through. Remove and set aside.
Combine the corn and next 9 ingredients, through the chile powder, in a large bowl and mix until well-combined. Taste and adjust seasoning accordingly.
Slice the chicken into thin strips (or dice). Take one piece of lettuce and top with a heaping tablespoon of the relish and 3-4 pieces of chicken. Sprinkle with a tablespoon of cheese and top with the sour cream.
Serve with your favorite salsa.
