Snackin’ With Sarah Sellers: Top 13 ‘Idol’ Results Show Viewing Nosh

Sarah Sellers, the supercool, sexy-spectacled food blogger who auditioned for "American Idol" this season, tragically didn't make it past episode one of Hollywood Week. (She's one of the most-robbed contestants of Season 10!) This left a bad taste in my mouth. But now Sarah is exclusively posting her tasty "Idol" snack recipes in Reality Rocks, offering the perfect noshing suggestions for your weekly "American Idol" viewing parties.

So tonight is a black night on "Idol"--the night when the first finalist is voted off, priming us for the many tragic, teary-eyed Thursdays that lie ahead. So let's drown our sorrows in comfort food this black evening...with some black bean dip!


Creamy Black Bean Dip

Yields 4 appetizer servings...double the recipe for your next "Idol" watch party!

▪ 2 slices center cut bacon, chopped
▪ 1/4 cup red onion, chopped
▪ 1/8 cup jalapeno, chopped
▪ 1 large garlic clove, chopped
▪ 1 15oz can black beans, rinsed and drained
▪ 1 tsp cumin
▪ 1 tsp chili powder
▪ 1/8 tsp kosher salt
▪ 1/4 cup water
▪ 1/8 cup water
▪ 1 green onion, chopped
▪ sour cream

In a large sauce pan, over medium heat, cook the bacon until crisp and the fat is rendered. Remove the bacon with a slotted spoon and set aside.

Saute the onion until soft, stirring frequently for 2-3 minutes. Add the jalapeno and saute for 2-3 more minutes. Add the garlic and saute until fragrant, around 30 seconds. Add the beans and the next 4 ingredients through the water. Simmer until water is evaporated and ingredients are married, around 2-3 minutes.

Place the bean mixture into a food processor and blend, slowing pouring in the 1/8 cup of water until a creamy consistency is reached.

Serve topped with a large dollop of sour cream and sprinkled with the green onion and reserved bacon bits.
